- 1kg small zucchini
- 2 small onions
- 1/4 cup of salt
- 2 cups white vinegar
- 2 cups sugar
- 1 teaspoon of ground tumeric
- 2 teaspoon of mustard powder or mustard seeds
- cumin seeds to taste (optional)
- Slice zucchini and onion.
- Add salt and cover with water. Soak for 15-30 min.
- Boil rest of ingredients together then add drained zucchini and onion mixture.
- You can also add other vegetables, such as celery.
- Cook until just tender and bottle while hot.
