Zucchini Pickle

Ingredients:

  • 1kg small zucchini
  • 2 small onions
  • 1/4 cup of salt
  • 2 cups white vinegar
  • 2 cups sugar
  • 1 teaspoon of ground tumeric
  • 2 teaspoon of mustard powder or mustard seeds
  • cumin seeds to taste (optional)

Steps:

  1. Slice zucchini and onion.
  2. Add salt and cover with water. Soak for 15-30 min.
  3. Boil rest of ingredients together then add drained zucchini and onion mixture.
  4. You can also add other vegetables, such as celery.
  5. Cook until just tender and bottle while hot.
