Broccoli Soup

  • 4-5 heads and stems of broccoli (roughly chopped)
  • 2 large leeks (roughly sliced)
  • 3 large potatoes (peeled  and  roughly chopped)
  • 3 chicken stock cubes
  • Pinch of cumin and nutmeg
  • Salt and pepper to taste
  • Cream (to serve)


  1. Add all ingredients except cream into a large saucepan.
  2. Just cover with boiling water and simmer until tender.
  3. Blend and serve the broccoli soup with a swirl of cream.
